6X HEALTHY DESSERTS

I don’t know about you all, but desserts are one of my biggest weaknesses. I love eating something sweet after a hot dish to end my meal with. Unfortunately, desserts are almost never macro-friendly, so I have to stick with a bowl of quark with a few toppings. But, where there’s a will, there’s a way! I went looking for the most delicious desserts that also happen to be healthy!

FROZEN YOGURT BERRY BITES

Ingredients:

  • 1/4 cup crushed almonds
  • 2 tablespoons coconut sugar
  • 2 tablespoons coconut oil
  • 3/4 cup plain (low-fat) Greek yogurt
  • 2 tablespoons honey
  • 1 1/2 cups fresh chopped strawberries and/or raspberries
  • 6-cup muffin tin and liners

STUFFED APPLES

Ingredients:

8 apples
1 cup whole oats
1 cup chopped walnuts
1/2 cup dried cranberries or raisins
2 teaspoons cinnamon
1 teaspoon vanilla extract
Pinch of salt
2 tablespoons (vegan) butter
1 cup + 3 tablespoons water

1/2 seedless watermelon
Fresh lemon juice
This sorbet is super simple to make and it’s healthy!

CHOCOLATE MOUSSE

  • 3/4 cup milk
  • 3 1/2 oz dark chocolate
  • 2 cups greek yogurt
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

This chocolate mousse is the perfect guilt-free dessert!

BLUEBERRY CHEESECAKE

Ingredients:

For the crust
  • 1/2 cup pecans
  • 1/2 cup almond flour
  • 2 pitted dates
  • 2 tablespoons coconut oil
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
For the cheesecake
  • 2 cups raw cashews
  • 1/2 cup canned coconut milk
  • 1/4 cup coconut oil
  • 1/3 cup maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vanilla extract or 1/2 teaspoon vanilla bean powder
  • 1/4 cup (frozen) blueberries
